This is easy and quick and the best part is it is very tasty!
In the morning put two boneless, skinless chicken breast in a ziploc bag, add the juice of one lemon and 2 tblsp of freshly grated ginger. Close the bag and place in the fridge. Just prior to starting dinner, take the bag out and without opening, simply take a meat tenderizor, and bang the breast out to flatten. Pan sear or cook on the grill. If cooking inside place coconut oil in the pan and then lightly salt with celtic sea salt and add pepper, if on the grill, melt a small amount of coconut oil and drizzle on breast then salt and pepper and cook. it takes just a short time to cook, depending on how thin you pound out the breast. It is Yummy!
