Cucumber-Avocado Soup

It’s dinner in the summer when it's too hot to cook!


  • 2 1/2 c. cucumber, fresh, organic
  • 1 lrg. avocado, fresh, organic
  • 1/4 c. cashews, raw, organic
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1/2 c. water, purified
  • 2 tbs. lime juice, pure, organic
  • 2 tsp. dill weed, fresh, organic
  • 1/2 tsp. sea salt, unrefined and pure


Combine all the ingredients in a high speed blender and blend until smooth. Serve or store in the refrigerator in a tightly covered jar for 24 hours.
