Zucchini Cheese Pizza Crust

I use this recipe as a base for a garden pizza casserole in the summer when the zucchini is running rampant! It makes a 9x13 pan, but it could also be made into "personal pizzas".

Ingredients

  • 4 c. zucchini, fresh, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 2 egg, omega-3, cage-free, organic
  • 1/2 c. cheese, mozzarella, whole fat, raw, grass-fed or pastured, organic
  • 1/2 c. cheddar cheese, mild, raw, organic
  • 1/2 c. cheese, parmesan, raw, organic

Directions

Shred the zucchini then sprinkle it with sea salt. Let stand 10 minutes. Drain well and press out water in paper towel. In large bowl, stir together zucchini, eggs, and the cheeses. Press on bottom of 9x13 pan for large pizza or drop by large spoonfuls and shape into personal size pizzas. Bake at 400 degrees for 20 minutes. To finish off as a "pizza", add your favorite pizza sauce and toppings, such as green peppers,mushrooms, onions, and extra cheese. Then bake at 350 degrees for 25-30 minutes.
