I use this recipe as a base for a garden pizza casserole in the summer when the zucchini is running rampant! It makes a 9x13 pan, but it could also be made into "personal pizzas".
Sprinkle zucchini with salt. Let stand 10 minutes. Drain well and press out water in paper towel. In large bowl, stir together zucchini, eggs, and the cheeses. Obviously, raw cheese would be the best, but I don't live in an area where they are easily accessible. Press on bottom of 9x13 pan for large pizza or drop by large spoonfuls and shape into personal size pizzas. Bake at 400 degrees for 20 minutes. To finish off as a "pizza", add your favorite pizza sauce and toppings, such as green peppers,mushrooms, onions, and extra cheese. Bake at 350 degrees for 25-30 minutes.
