These muffins are moist and delicious... a favorite with my family!
Boil the oranges whole for two hours. Remember to keep topping up the water in the saucepan with boiling water from the kettle. Allow to cool.
Preheat oven to 320ºF. Grease or line 12 cups of a muffin tin.
This recipe works in two batches. First, cut 1 orange into 8 pieces (leave the peel on!). Add orange slices, 1 cup of almond meal, 2 eggs, 1/3 cup of raw honey, and 1 teaspoon of baking soda to a food processor. Whizz for approximately 20 seconds or until batter is smooth. Spoon the batter into six muffin cups. The muffins do not rise much so fill the cups as much as you like. Repeat the process with the remaining ingredients.
When you have all 12 muffin cups filled, bake for 18-20 minutes, until golden brown on top and a toothpick inserted in the center comes out clean.
