Chocolate Coconut Almond Cookies

All Good Stuff Cookies, loaded with protein, and fiber, and can help you to lose weight.


  • 1 c. almonds
  • 1 c. shredded coconut
  • 1/4 c. coconut oil
  • 4 tsp. cacao powder
  • 1/2 tsp. cinnamon
  • 1/2 c. honey, raw
  • 1/4 c. walnuts
  • 1/4 c. cashews


Preheat oven to 350ºF. Line a baking sheet with parchment paper.

Chop or grind the almonds, coconut, walnuts and cashews - I use a small coffee grinder that I never used for coffee. I use it for spices like cinnamon, and ground the nuts only to a texture of about fine sand. If you grind too much you may get a different texture, and the cookies may seem gritty if you don't grind the coconut enough.

Mix all dry ingredients in a medium bowl first. Then add the melted coconut oil and honey. Work it with a tablespoon removing honey from the spoon several times with your fingers. You may end up rinsing your hands many times during the cookie forming process.

Make about 12 cookies the size of ping pong balls or smaller with your hands wet with water. Work the ball flat pressing into a cookie shape and place one inch apart on the baking sheet. Bake for 12-15 minutes.

Remove from oven and place on stove for about five minutes to cool. Cookies are very soft at this stage. Remove cookies from paper with a spatula and place on baking sheet to cool completely; about 10 minutes. Enjoy!
