Creamy, spicy and quick. Husband wanted more curry powder but the kids and I didn't. We won. lol :) But, you spice it up to your liking!
Melt butter (or coconut oil or olive oil) over low heat. Saute minced onion. Blend in curry powder, arrowroot (or spelt flour etc), sea salt, honey or stevia, and ground ginger. Cook over low heat until the mixture is smooth and bubbly. Stir often. Remove from heat. Stir in chicken broth and milk. Bring to a boil, stirring constantly. Boil one minute. Add lemon juice and diced chicken.
Sometimes I'll add a few thinly sliced mushrooms if I have them.
Serve this over wild rice or brown rice or brown rice noodles (etc).
