Makes 16 delicious cookies. I am not certain about the ratios above. This is a great afternoon snack for the kids.

  • 1/4 c. pumpkin puree, 100% pure, canned, organic
  • 1/4 c. honey, raw, unfiltered, organic
  • 1/4 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 c. flour, oat, organic
  • 1/2 tsp. baking powder, organic, gluten & aluminum-free
  • 1/2 tsp. baking soda, pure
  • 1/2 tsp. cinnamon, ground, organic
  • 1/8 tsp. sea salt, unrefined and pure
  • 1/2 c. oats, old fashioned rolled, dry, organic

Preheat oven to 375°F.

Mix pumpkin, honey, and butter together (butter will still be lumpy). Mix in remaining ingredients except oats. Mix well until the butter is no longer lumpy. Mix in oats. Drop by tablespoons onto lightly greased cookie sheet (or use a Silpat). Bake 8-12 minutes until firm and brown. Let cool slightly before removing to a rack to cool completely. Makes 16 cookies. The cookies will be a bit crumbly.
