This is a super-easy and quick breakfast or snack!
Melt the oil in a small frying pan. Add the peas (I use frozen ones) and stir to coat in oil. Move the peas around a bit so that they defrost evenly. When the peas are just about done, break 2 eggs into the pan and stir everything together. Move the mixture around gently while the eggs cook. Season with salt and pepper if desired.
I feel full and completely satisfied after this breakfast!!
You could very easily use only 1/2 cup of peas and serve the scramble on a piece of toast - the carb count would be the same.
