Tomato and Onion Bake

A low calorie side dish!


  • 4 lrg. tomatoes, red, fresh, organic
  • 1 lrg. onion, red, organic
  • 2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 3 tbs. bell pepper, green, fresh, organic


Preheat oven to 450°F. Cut tomatoes crosswise into 1/2-inch slices. Cut onions crosswise into 1/4-inch slices. In a 9 X 13 inch baking dish, arrange tomatoes and onions in rows, overlapping slightly. Drizzle with olive oil and season with salt and pepper. Add diced green pepper on top to garnish, if desired.

Bake until tomatoes are lightly browned and tender; about 45 minutes.

Can be served warm or at room temperature.
