Texas Steph's Holishka

Old Hungarian recipe I got from my dad. This meal is so filling! And it might sound weird at first, but by the second bite you will become addicted!

Ingredients

  • 1 med. cabbage, fresh, organic
  • 6 pce. bacon, uncured, nitrate-free, organic, pastured
  • 1 c. quinoa, white, organic
  • 2 c. water, purified
  • 1 c. cottage cheese, full-fat, raw, grass-fed or pastured, organic

Directions

Shred cabbage into 1-inch squares. Fry bacon in deep frying pan until done. Remove bacon, but leave grease in pan. Cook cabbage in frying pan until cabbage is translucent and soft, about 20 minutes. Combine quinoa and water in a saucepan. Bring to a boil, reduce heat, and let simmer until liquid is absorbed, about 10-12 minutes. Set aside. Combine cooked bacon, cooked cabbage, quinoa, and cottage cheese in a large pan. Serve warm.

*Tastes even better as leftovers!!
