I layer this slaw in a clear straight-sided bowl to display the colorful vegetables/fruit in the slaw.
Salad: In a large glass bowl layer cabbage, sweet red peppers (cut into bite-size strips), shredded carrots, and grapefruit sections. Add sliced green onions and lime peel. Add about 1/2 of the dressing and toss to coat. I usually serve extra dressing on the side.
Dressing: In a small jar combine olive oil, tequila, fresh ginger (1/2-inch section, peeled and thinly sliced), juice and peel of lime, and the crushed red pepper. Cover and shake to combine. Allow to stand at least one hour before serving. Shake before serving to mix well.
I have also used orange in place of the grapefruit and it, too, is delicious.
