No Corn "Corn Bread"

Coming from the south, corn bread is a staple in my family, so I had to come up with a healthier version, and this is by far the best "corn bread" I have ever had, and my family absolutely loves it.

Ingredients

  • 1/2 c. flour, millet, organic
  • 1/2 c. flour, quinoa, organic
  • 3 tsp. baking powder, aluminum-free
  • 1/2 tsp. sea salt, unrefined and pure
  • 1/2 tbs. stevia, loose
  • 3/4 c. water, purified
  • 1 tbs. coconut oil, raw, extra-virgin, organic

Directions

Preheat oven to 350°F. Mix all ingredients in a bowl. Pour in greased loaf pan. Bake for about 30 minutes or until firm, and no longer jiggly. Slice and enjoy!
