These pancakes are absolutely delicious and very healthy. I always have some berries in the freezer to add them to my recipes and make my meals more interesting. You can use blueberries, raspberries, cranberries... anything you like. Berries will make your pancakes more moist and tasty even without adding any other toppings. Nuts give them more interesting texture. My favorite combination is cranberries, raspberries, walnuts and hazelnuts.

  • 1/4 c. flour, spelt, whole-grain, organic
  • 1/4 c. flour, brown rice, organic
  • 2 tbs. stevia, loose
  • 1 tsp. baking powder, organic, gluten & aluminum-free
  • 1 egg, omega-3, cage-free, organic
  • 1/2 c. water, purified
  • 2 tbs. walnuts, raw, organic
  • 2 tbs. hazelnuts, raw, organic
  • 2 tbs. cranberries, dried, organic
  • 2 tbs. raspberries, fresh, organic
  • 1/2 tsp. cinnamon, ground, organic
  • 1 pinch sea salt, unrefined and pure
  • 2 tbs. coconut oil, raw, extra-virgin, organic

Mix all your dry ingredients, except for nuts and berries. Add an egg and slowly start adding milk until you have the right consistency. Add all the berries and nuts.

Melt some coconut oil in the pan, add some pancake dough.

When the bubbles start forming, flip the pancake and cook from the other side.
