Panzanella with Chicken Sausage

Delicious and fast - a great summer meal!


  • 6 med. tomatoes, red, fresh, organic
  • 1 cucumber, English, fresh, organic
  • 1/2 med. onion, red, organic
  • 3 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 tbs. vinegar, red wine, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • 2 slc. sprouted whole grain bread, from organic grains
  • 1/3 c. basil, fresh, organic
  • 12 oz. sausage, chicken, Italian-style, free-range, organic


In a large bowl, toss together the tomatoes (cut into wedges), cucumber (cut into half moons), onion (thinly sliced into half moons), oil, vinegar, salt, and pepper. Cut the bread into 3/4-inch chunks. Add the bread chunks and coarsely chopped basil to the veggie mixture, and toss well so all the bread is well moistened.

Preheat a grill over medium-high heat. Add the sausage and cook, turning once or twice, until warmed through and grill marks are formed, about 8 minutes. Serve the sausage whole alongside the panzanella.
