Honey mustard grilled shrimp. So yummy!
Presoak 8 bamboo or wooden skewers in cold water for at least 20 minutes to prevent burning.
Thread the shrimp and tomatoes alternately onto skewers, starting and ending with tomatoes.
In a small bowl, mix together the butter, Dijon, honey, and water. Set aside.
Heat grill until hot. Coat grill with a bit of oil and heat to medium high. Lay the shrimp skewers onto the grill. Cook for 1 to 2 minutes, or until the underside of the shrimp turns pink. Turn the skewers over and brush cooked side of shrimp with sauce. Cook for 1 to 2 additional minutes, or until underside turns pink and shrimp is cooked through. Brush remaining sauce onto freshly cooked side of shrimp and serve.
Sometimes I'll add other veggies onto the skewers. Just depends on what I have that day. This is so good with just a big salad and/or some wild or brown rice. And for me, a slice or two of lemon to squirt over the shrimp. :)
