Super easy and does well in the refrigerator - this is one of those things I make on the weekend so we can eat it throughout the week.
Place the chicken in a crockpot. Add lime juice and chili powder (spread out over all the chicken). Cover and cook on low for 5-6 hours or until chicken is tender. Remove chicken from crockpot. Shred meat with two forks and return to the crockpot. Stir in salsa. Cover and cook on low for about 30 minutes.
There are so many ways to eat this - add it to a salad for some protein, eat it in a tortilla or lettuce wrap like a taco, use celery sticks and eat it like a dip, etc. So good!
