Quick Grain Free Bread

Gluten Free, Dairy Free, Grain Free. Makes 1 loaf/16 slices.

Ingredients

  • 1 1/2 c. almond flour
  • 2 tbs. coconut flour
  • 1/4 c. ground flax seeds
  • 1/4 tsp. sea salt
  • 1 1/2 tsp. baking soda
  • 5 egg
  • 1/4 c. coconut oil
  • 1/2 tbs. honey, raw
  • 1 tbs. apple cider vinegar

Directions

  1. Pulse almond flour, coconut flour, flax, salt and baking soda in a food processor.
  2. Pulse in eggs, oil, honey and vinegar.
  3. Pour batter into a greased 7.5 inch x 3.5 inch loaf pan (NOTE: A 9 x 5 pan will work fine, but the bread will not be "tall").
  4. Bake at 350°F (177ºC) for 25-30 minutes.
