Yogurt Whipped Potatoes

The tanginess of the yogurt gives the perfect balance of flavor to white potatoes


  • 3 lbs. potatoes, white or gold, organic
  • 3/4 c. yogurt, greek, plain, full-fat, plain, organic
  • 1 1/2 c. cauliflower, fresh, organic
  • 1 bch. chives, fresh, organic
  • 4 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • sea salt, unrefined, & fresh ground pepper, organic to taste


Cover the potatoes and cauliflower with cold water ( enough to cover by at least 2 inches) and add a teaspoon of salt. Bring potatoes and cauliflower to a boil, reduce heat and simmer until tender. Drain potatoes and cauliflower, mash with masher and whip them with a stiff whisk. Whisk in yogurt, chives, butter and salt and pepper to taste. Serve immediately.
