I was playing around in the kitchen to make a lentil soup and came up with this one that my roommate raved about. Super easy to make and has a great flavor! I'm not sure about the ratios per serving though
Mince the garlic cloves and add them to a pot with approx 1 tbsp coconut oil on low heat. Take the bag of mixed veggies and chop them more finely in a blender/food processor add the veggies to the pot with the garlic and some sea salt and cover for a few minutes to let the veggies "sweat". add the diced tomatoes as well as a few additional cans of water depending on how soup-like or stew-like you want it and add sea salt to taste. Add Chili powder to taste and add potatoes so they can start cooking. Drain the lentils, rinse and add to the mix. Cover and let simmer. Once the potatoes are tender enough your soup is ready!
