Some great tasting scrambled eggs without the fancy stuff.
First, rinse a bell pepper and a cup of spinach. Chop a table spoon of bell pepper, or more if you like (I like about two tablespoons) and roughly cut the spinach in smaller, bite sized pieces.
Beat two eggs together, adding salt and pepper. Then, add the veggies. You don't need to mix them too thoroughly. In a cold pan, add the olive oil and set on low/medium or medium heat.
Add eggs, and let sit for a few second before stirring it up. I like mines really cooked, but it depends on your taste. Cook it as much as you please. Don't let it burn.
