This is a delicious and healthy breakfast or desert idea. And can be made in different variations. Enjoy! My family always likes it!
Cut the apples in two halves, and core them. Preheat oven to 350°F/ 190°C (Gas mark 5). Bake for about 45 minutes, until apples are tender. While the apple halves are baking, prepare the filling: Mix cottage cheese, Greek yogurt, and raisins. Spice with cinnamon. Add stevia (if desired).
After baking, fill the apple center with filling. Serve warm.
You might want to sprinkle coconut milk chocolate or grated coconut on top. Next time I want to try them with chopped nuts or dried fruit.
