Modified from myrecipes.com - my husband is not a fish eater, but the relish is just perfect for masking any "fishy" taste.

  • 1/4 tsp. sea salt
  • 4 tsp. red pepper flakes
  • 4 whitefish
  • 1 1/2 c. pineapple
  • 1 onion
  • 1/3 c. roma tomatoes
  • 1 rice vinegar
  • 1 tbs. cilantro, bunch, fresh, organic
  • 1 sml. jalapeno pepper
  • 4 lime
  • 2 tsp. coconut oil
  • 1 tbs. seasoning, cajun, organic

Heat oil in a large skillet over medium-high heat. Combine Cajun seasoning, salt, and pepper in a small bowl. Sprinkle fish evenly with spice mixture. Add fish to pan, and cook for 2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.

Combine pineapple and next 5 ingredients (through jalapeno) in a large bowl, stirring gently. Serve pineapple mixture with fish. Garnish with lime wedges.

  • prot will depend upon the portion of fish consumed. serving of relish is about 1/2 cup, so really less than 1 carb.
