This is a spicy shrimp dish served over brown rice.

  • 1 1/2 lbs. shrimp, fresh, wild-caught
  • 8 oz. tomato sauce, organic
  • 2 c. rice, brown, organic
  • 1 sml. onion, any type, organic
  • 1 sml. bell pepper, green, fresh, organic
  • 2 garlic, fresh, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 tsp. worcestershire sauce
  • 1/4 tsp. bell pepper, red, fresh, organic
  • 1/2 tsp. thyme, dried, organic

Peel and devein shrimp. Sauté onions, green pepper, celery and garlic in coconut oil until tender. Stir in diced tomato, tomato sauce, Worcestershire sauce, oregano, thyme and red pepper. Cook over medium heat, stirring occasionally about 15 minutes or until desired consistency. Stir in shrimp and simmer over medium heat 5 to 10 minutes or until shrimp are done. Serve over cooked brown rice.
