Melt coconut oil in a pan then add minced ginger and garlic and sauté 2 minutes, then add chicken pieces and sauté 5 minutes. Add chopped tomatoes, chopped onion, and cumin seed, salt, crushed red pepper. Simmer covered over medium heat for 20 minutes or until chicken is tender. Add cilantro leaves and lemon juice and serve with rice any veggie or alone.
