A delicious supper!

  • 2 c. spinach, fresh, organic
  • 6 oz. salmon, fresh, wild-caught
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 lrg. tomatoes, red, fresh, organic
  • seasoning or spices of your liking to taste
  • 2/3 c. mushrooms, white, organic

Saute mushrooms in 1 tbsp coconut oil Melt the other tbsp coconut oil (either by microwave or in stove pan) Slice/chop tomato Put spinach in bowl you will serve salad in Drizzle melted coconut oil on the leaves Slide tomato off of cutting board onto spinach Pour mushrooms along with coconut oil in which they were cooked onto spinach Put salmon on top of all (draining first is optional--I like to leave the juice in) Season to taste Enjoy!!
