Broccoli Curry Salad

Perfect spring salad!


  • 4 c. broccoli
  • 1/3 c. Greek yogurt
  • 1 med. red bell pepper
  • 1/2 c. raisins
  • 2 tsp. lemon juice
  • 1 tsp. curry powder
  • 1/4 c. sliced almonds


Cook broccoli in boiling water for 2 minutes. Place in ice water to stop the cooking. Drain and pat dry.

In a large bowl combine all ingredients except almonds and chill until ready to serve.Toss in almonds, salt, and pepper.
