Zucchini Pizza

Introducing our new fave......Zucchini Pizza! My kiddos love it!

Ingredients

  • 4 sml. zucchini, fresh, organic
  • 1/2 tsp. garlic, fresh, organic
  • 1 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 2 tomatoes, roma, fresh, organic
  • 1/2 tsp. breadcrumbs, made from sprouted whole-grain bread, organic
  • 1/4 tsp. parsley, fresh, organic
  • 1/4 c. cheese, mozzarella, whole fat, raw, grass-fed or pastured, organic

Directions

Preheat oven to 350°F and line a baking sheet with parchment paper. Cut the zucchini in half, lengthwise. Scoop out the center with a spoon. Brush the surface with a mixture of crushed garlic, olive oil, salt, and pepper. Arrange sliced tomatoes on top, sprinkle with breadcrumbs and bake for about 30 minutes. Remove baking from oven and sprinkle mozzarella on top. Return to oven and broil until top of “pizza” is golden. Remove and sprinkle with parsley (or basil or both)! A serving is both halves of one zucchini.
