I got this recipe from a cheese magazine that came in my mail the other day. I modified it and it turned out great. Had this 2 days ago for my husband and I. He said he felt like he was at a fine restaurant!
Cook lentils for about 20 mins until tender. Meanwhile cook salmon fillets at 375 degrees in oven for 12-15 mins. In a large bowl, mix remaining ingrediants. Rinse lentils, drain and add to bowl. Toss to thoroughly coat lentils with dressing. Divide salmon and serve on top of salad.
The total for the recipe is 7 carbs, 7 fat, and 17 protein, so I based this recipe on 4 servings.
I was a little short of time so I used canned lentils and rinsed them!
