Chocolate Almond Raisin Cookies

Amazing low-GI chocolate cookies!


  • 2 1/2 c. almond flour
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking soda
  • 1/2 c. coconut oil
  • 1 tbs. vanilla extract
  • 1/2 c. honey, raw
  • 1/4 c. cacao powder
  • 1/4 c. sliced almonds
  • 1/4 c. raisins
  • water to taste


Preheat oven to 350°F. Line a baking sheet with parchment paper.

Mix almond flour, baking soda, sea salt, and cacao powder in a mixing bowl.

Melt coconut oil in a pan on low heat. Remove from heat and mix in honey and vanilla, stirring until fully incorporated.

Add wet ingredients to dry, and mix well. You might have to add a some water to make the consistency "doughy" (possibly up to 1/4 cup). TAKE NOTE: The batter should not be runny.

Stir in almonds and raisins.

Form little balls on parchment-lined baking sheet and press down with a spoon till about 1/2 to 1/3 inch thick.

Bake for 8-10 minutes.

Let cool before you eat them or store them as they will break. They only turn crispy once they start cooling down.
