Cucumber Avocado Soup

Chilled tasty soup perfect for a hot Summer lunch

Ingredients

  • 1 cucumber
  • 1 avocado
  • 1/2 tsp. lemon zest
  • 1 tbs. lemon juice
  • 2 green onion
  • 1 jalapeno pepper
  • 1 c. Greek yogurt
  • 1 c. water
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper

Directions

  1. Puree all ingredients in food processor or blender.
  2. Divide soup into 4 bowls, garnish on top with reserved cucumber, small avocado pieces and zest
  3. Cover with plastic wrap.
  4. Refrigerate or place in freezer 20-30 minutes
