Forbidden Black rice cracker that is easy to make, very tasty and very healthy
Cook enough rice to equal 2/3 cup cooked black rice. In a grain grinder (I use a Vitamix blender) grind the 1 1/2 cups uncooked black rice and the 2/3 cup of the cooked Forbidden Black Rice into flour. In a bowl, mix all dry ingredients together. Add water a little at a time until dough holds together. Using oiled hands, shape the dough into a ball and place it on a lightly oiled baking sheet or use a Demarle Silpat (my personal choice). Press dough onto baking sheet or Silpat to about 1/8" thick. Gently cut into squares of desired size. Bake in 375 degree oven 25 minutes, or until crackers are crisp. Do not over bake, or the crackers will be hard. Cool. Serve alone or topped with some sort of nut butter. These make a very healthy, gluten free snack.
Note: The forbidden black rice gives the crackers their lovely purple color.
