This is a great recipe for when you want something fast and warm. Sorry not sure how the breakdown of the protein and carbs would be.
Saute' onions, garlic, carrots, and celery in olive oil for about 5 minutes. Add the salt, pepper, basil and oregano Add the tomato juice and chicken stock Let simmer until it comes to a low boil about 5 - 10 minutes Add the fresh or frozen spinach Simmer covered for 10 minutes Add the barley Simmer until the barley is tender. Serve with a side salad.
