Tomato Florentine with Barley

This is a great recipe for when you want something fast and warm. Sorry not sure how the breakdown of the protein and carbs would be.


  • 1 sml. onion, any type, organic
  • 2 carrot, fresh, organic
  • 2 stlk. celery stalk, fresh, organic
  • 1 clove garlic, fresh, organic
  • 1 tsp. basil, fresh, organic
  • 1 tsp. oregano, dried, organic
  • 3 c. spinach, fresh, organic
  • 32 oz. tomato sauce, organic
  • 32 oz. chicken stock, organic, free-range
  • 1 c. barley, pearled, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic


Saute' onions, garlic, carrots, and celery in olive oil for about 5 minutes. Add the salt, pepper, basil and oregano Add the tomato juice and chicken stock Let simmer until it comes to a low boil about 5 - 10 minutes Add the fresh or frozen spinach Simmer covered for 10 minutes Add the barley Simmer until the barley is tender. Serve with a side salad.
