A one pan dish that is like pizza without crust.
Saute veggies (onions, peppers, chilies, spinach, etc. - it's your choice!) and sausage in coconut oil for approximately 5 minutes. Season tomato as desired and put in pan until hot, turning once. Plate by putting tomato first, then meat and veggie mixture, and topped with cheese. I eat this for breakfast or lunch usually. You can add more sausage for more protein.
