Oatmeal Raisin squares with walnuts. Made with organic oats and coconut oil.

  • 2/3 c. coconut oil, raw, extra-virgin, organic
  • 3 c. oats, old fashioned rolled, dry, organic
  • 1/4 c. stevia, loose
  • 2 tsp. vanilla extract, organic
  • 2 egg, omega-3, cage-free, organic
  • 1/4 c. honey, raw, unfiltered, organic
  • 1/4 c. raisins, organic
  • 1/2 c. walnuts, raw, organic

Preheat oven to 350 degrees.

In a sauce pan add coconut oil, vanilla extract and honey. Heat on low until oil melts and honey is liquid. Remove from heat.

In large mixing bowl combine dry ingredients oats, stevia, raisins, walnuts mix well.

Add eggs to coconut oil mixture and blend well (make sure mixture is cool or eggs will cook)

Combine wet and dry ingredients and mix well. Pour into a parchment lined quarter sheet pan (9" x 13") Spread evenly to the edges.

Please Note - I use a scale to weight ingredients so easier for me to use grams that measure out cups and more exact for baking.

Bake for approximately 45 mins or top is light brown. Allow to cool before cutting into 24 squares.
