This is a quick filling breakfast for one that contains only 2 Protein and 2 Carbs. (which works well if you are on the 14 day quick start plan and have a mixed metabolism) If you can add Fat to your breakfast, I suggest sprinkling a bit of raw cheese on top of the frittata before placing in oven. The broccoli can easily be switched out for spinach or any other vegetable that you like.
Preheat oven to 375. Chop broccoli and tomatoes into small bit size pieces. Slice mushrooms. Using an oven safe fry pan (8 pan works really well), saute broccoli and mushrooms in coconut oil until just tender. Add chopped tomato. Beat the 2 eggs and add to the pan. Continue cooking on stove top, till the outside of the frittata starts to set up. Place pan in oven for about 5 minutes.
Remove when center is cooked, plate and enjoy.
