A healthified version of everyone's favorite - chicken parm!
Season chicken with Italian herbs, garlic powder, onion powder, sea salt, and pepper. Let sit in a covered container in the fridge to absorb the spices.
Meanwhile, pulse dried bread in a food processor to make bread crumbs (may need to toast the bread first to dry it out a bit). Mix bread crumbs with grated Parmesan cheese and additional Italian herbs, garlic powder, onion powder, sea salt, and pepper.
Remove chicken from fridge. Lightly beat the egg yolk, and pour over the chicken. Then roll chicken in bread crumb mixture. Brown in coconut oil, top with mozzarella, and bake in the oven for about 20-30 minutes.
Serve with tomato sauce and pasta, spaghetti squash, or zucchini noodles. Yum!
