In large sauce pan, steam the kale (with salt and pepper added if you wish) until wilted to your liking. I also chop mine into bite-sized pieces.
Meanwhile, saute garlic and onion in oil until soft. Add shrimp and peppers, cook until shrimp is almost pink, and add mushrooms and snap peas. (Add mushrooms earlier if you like them more done, as snap peas only really need to be heated or they fall apart). Add salt and pepper to taste.
Separate the kale into 2 bowls, top with veggie/shrimp mixture. Top with 1-1 1/2 oz goat cheese, and parsley if you wish.
