Delicious vegetarian lunch

  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1/2 c. onion, red, organic
  • 2 carrot, fresh, organic
  • 1 c. quinoa, white, organic
  • 2 c. broth, vegetable, organic
  • 2/3 c. walnuts, raw, organic
  • 1/4 c. parsley, fresh, organic

Heat olive oil over med-high heat. Cook onion until translucent. Add carrot and cook for aprox 3 min longer. Stir in quinoa and vegetable broth, bring to a boil. Reduce heat and simmer (covered) for 15-20 min until quinoa is tender and fluffy. Remove from heat toss in a bowl with the walnuts and parsley. Serve hot or room temperature.
