My family loves this savory chicken dish. Its pretty simple and is a one dish dinner. Add a tossed salad and whala! dinner is served. I use the cooking time to add in a work out.
Remove skin from the chicken. In a bowl combine 1/4 cup olive oil, sea salt, pepper, basil, oregano, rosemary and chopped garlic. Toss the chicken in the garlic mixture and place in 13 x 9 baking dish. Peel and cut up some sweet potatoes and toss in the bowl with the remaining oil and seasoning to coat. Layer over the chicken. Bake at 400 degrees. Turning once halfway through cooking.
