Chicken Salad Wrap

Makes two wraps – I use the small Ezekiel 4:9 Sprouted Grain Taco Size Tortilla wraps or make the Beyond Diet homemade tortilla wraps!

Ingredients

  • 1 c. cooked chicken
  • 1/2 shallots
  • 1 sml. celery stalk, fresh, organic
  • 1/3 sml. zucchini
  • 1 sml. red bell pepper
  • 2 tbs. cilantro, bunch, fresh, organic
  • 1/2 avocado
  • 1 roma tomatoes
  • 1/2 carrot
  • 1/2 c. Unknown (0)
  • 1 tbs. dijon mustard
  • 1/4 tsp. dried tarragon
  • 1 dsh. sea salt
  • black pepper to taste

Directions

Dressing- 1/4 cup Beyond Diet approved mayonnaise, 1 tablespoon Dijon mustard, 1/2 teaspoon of tarragon, a dash of salt, black pepper to taste.

Chicken Mixture- 1 cup, cooked chicken, 1/2 shallot (minced), 1 chopped celery stalk, 1/3 chopped zucchini, 1 chopped red pepper, 2 tablespoons chopped cilantro, 1/2 avocado, 1 roma tomato sliced, 1/2 shredded carrot.

Pour dressing over the chicken mixture and toss to coat. Refrigerate until well chilled. Spread 1 Tbsp of the reserved dressing on each wrap, layer avocado, tomato, then ½ of the chicken mixture, top with shredded carrot. Roll up your wrap and slice in half and serve.
