I don't know about you, but i have a lot of trouble stopping at one slice of cake! With this one, a single serving is two slices which makes me VERY happy :)
Cooking time is based on a 20cm round springform pan - so the cake ends up about 1.5cm high. If your cake is higher, allow longer cooking time.
Line your springform pan with baking paper. Grease the sides of the pan with butter or coconut oil. Pre heat the oven to 180 degrees Celcius.
Beat the eggs, baking powder, cinnamon and maple syrup together until pale. Fold in the coconut. almond meal and psyllium husk. If you need a bit more moisture, add a few tablespoons of water, but the mixture should be just wet (kind of like dough).
Put the mixture in the pan and flatten out to cover the base of the pan. Cook in the oven for 30-35 mins.
A serving is a quarter of the cake, so turn it upside down and spread a teaspoon of butter. Serve with half a cup of fresh berries, (or half an apple as shown).
