White Bean and Chicken Chili

Quick and easy - and good for you!


  • 14 fl oz. chicken broth, organic, free-range
  • 2 chili pepper, green, organic
  • 1/2 tsp. oregano, dried, organic
  • 15 oz. beans, white, cooked or canned, organic
  • 1/2 tsp. coriander seed, organic
  • 1/4 tsp. cumin powder, organic
  • 2 corn on the cob, fresh, organic
  • 1 lbs. chicken, cooked, free-range, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 56 oz. tomatoes, diced, canned, organic
  • 2 clove garlic, fresh, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 med. onion, any type, organic


Heat coconut oil in a large saucepan. Add minced garlic and chopped onion; cook until soft.

Stir in chicken broth, diced tomatoes, diced green chilies, and spices. Bring to a boil, simmer for 10 minutes.

Add corn kernels, cooked and diced chicken, and beans (drained and rinsed). Simmer for 5 minutes.

Season with salt and pepper to taste, and enjoy!
