Chicken Florentine Soup

Chicken soup with spinach and pimentos.


  • 1 lbs. cooked chicken
  • 2 clove garlic
  • 2 c. spinach
  • 4 oz. pimentos, canned, organic
  • 4 c. chicken broth
  • sea salt & black pepper to taste
  • 2 tsp. extra virgin olive oil


Heat oil in a pot over medium heat. Add minced garlic and saute for 1 minute. Add chopped spinach, and saute for a few minutes. Add diced pimentos and chicken broth. Add cooked and cubed chicken; stir to combine. Season with sea salt and pepper, to taste. Heat for 15 minutes, uncovered. Serve warm and enjoy!
