Combine egg yolks, lemon juice, mustard, paprika, salt, and olive oil in blender or food processor. Blend for about 60 seconds. While machine is running, pour coconut oil very slowly (you will need to heat it to a liquid first) in a fine steady stream. Mayo will thicken as oil is added slowly. Adjust seasonings to taste.
Two tbsp would equal one serving. This makes about 1 1/2 cups.
