Great as a side dish or used with burritos, tacos or a quick veggie dish. This is a staple for our family. I like it with black beans & salsa for a quick snack.
Cook the rice (2 cups) in 4 cups of water for 40 minutes. While the rice is cooking, wash the cilantro and remove the stems (unless you like the stems) then chop finely. Juice the limes.
Cool rice for about 15 minutes then add the lime juice & cilantro. Easy & wonderful flavor!
