This is my new and improved, healthy version of my old Cheesy Potato Soup.

  • 3 chicken breast, skinless, organic, free-range
  • 3 lrg. carrot, fresh, organic
  • 1 lrg. onion, any type, organic
  • 1 lbs. potatoes, white or gold, organic
  • 1 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 14 fl oz. coconut milk, unsweetened, full-fat, organic, canned
  • 3 tsp. basil, dried, organic
  • 2 c. celery stalk, fresh, organic
  • 2 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 tbs. parsley, fresh, organic
  • 2 clove garlic, fresh, organic
  • 1 tbs. rosemary, dried, organic
  • 1 tbs. paprika, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Boil or grill the chicken, then cut or shred into pieces. Set aside.

Chop carrots, scrub and dice potatoes, slice celery, and chop onions. Combine vegetables and a little bit of pan in a saucepan. Bring to a boil. When veggies are tender, reduce heat, and add the remaining ingredients. Stir and let simmer until heated through.

This recipe will feed at least 12 people with smaller portions (about a cup or cup and a half).
