Turkey and White Bean soup

Quick , easy and delicious. You could try chicken instead.


  • 17 1/2 oz. sausage, turkey, Italian-style, free-range, organic
  • 1 sml. onion, any type, organic
  • 1 chili pepper, jalapeno, fresh, organic
  • 1 garlic, fresh, organic
  • 2 tsp. chili powder, organic
  • 2 tbs. tomato paste, organic
  • 30 fl oz. chicken broth, organic, free-range
  • 18 oz. kidney beans, canned, organic
  • 2 c. kale, any variety, fresh, organic
  • 1/4 c. lime juice, pure, organic


Heat a large pot over medium. Add sausage. Using a fork break up meat, cook, stirring often until no pink remains 4-5 mins. Stir in onion,pepper,garlic,chili powder and tomato paste. Cook until onion starts to soften, 2-3 mins.

Add broth and 2 cups water. Bring to a boil, than reduce heat to med-high. Add kale and beans. Cook,stirring occasionally, until kale is cooked, about 5 mins more. Remove from heat. Stir in lime juice.
