Yummy, satisfying breakfast.

  • 1 c. oats, steel cut, dry, organic
  • 3 med. apple, red, fresh, organic
  • 3 c. water, purified
  • 1 tsp. sea salt, unrefined and pure
  • 1 tbs. cinnamon, ground, organic
  • 1 tsp. nutmeg, organic
  • 3 oz. walnuts, raw, organic

Add steel cut oats to pot. Put peeled apples in food processor and add some of the 3 cups of water to obtain apple puree. (Another option: You can coarsely chop the apples if you prefer.) Add the apple puree and water to the pot along with the sea salt, cinnamon, and nutmeg. Bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.

NOTE: I usually cook the oats at night so that they are quick to make in the morning. Once cooked, I allow the oats to cool and then put them in a container in the fridge. In the morning, I portion out 2 carb servings (which is 300 grams) and heat them up in a pan with a bit of coconut milk. Once piping hot, I add 1 ounce of walnuts (my 2 proteins) and a bit more coconut milk to cool it down. This breakfast keeps me full of energy for hours to come. This one recipe makes three breakfasts for me, so I only need to make it every third day.
