Ingredients

  • 1 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 2 tsp. garlic, fresh, organic
  • 1 sml. onion, any type, organic
  • 1/2 bell pepper, red, fresh, organic
  • 1 c. quinoa, white, organic
  • 2 c. broth, vegetable, organic
  • 2 tbs. parsley, fresh, organic
  • 1/2 tbs. thyme, fresh, organic
  • 1/4 tsp. sea salt, unrefined and pure

Directions

1 Melt butter in a saucepan over medium heat. Add the onion, garlic, red pepper and saute for about 2 minutes. Add the quinoa to the onion mixture and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth (I like to do 1 cup veg and 1 cup chicken) and bring to boil. Reduce to a simmer, cover, and cook for 20 minutes, or until quinoa is tender.

2 In a bowl, toss quinoa together with parsley, thyme, salt. Sprinkle with lemon juice, and serve.
