This is a simple but great dish for entertaining family and friends and still be on your healthy eating plan. The marinade tenderizes the steak for grilling and the peppers add spicy smoky flavors and bright color.

  • 24 oz. beef flank steak, grass-fed or pastured, organic
  • 1 garlic, fresh, organic
  • 1 lime, fresh, organic
  • 1 1/2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • 1 lrg. bell pepper, green, fresh, organic
  • 1 med. bell pepper, red, fresh, organic
  • 1 lrg. bell pepper, yellow, fresh, organic

Place steak in a heavy plastic bag. Combine marinade ingredients, whisking to blend. Pour marinade over steak, turn to coat. Seal bag and refrigerate 2 to 3 hours.

Grill steak and char peppers over hot coals (or put peppers under broiler and char). Cook steak about 10 minutes per side for medium.

Turn peppers until skins are charred and blackened, place peppers in paper sack,close and allow the steam for about 10 minutes. Remove skins, slice into strips and keep warm, Place steak on warm platter, let stand for a few minutes before carving. Serve with the peppers.
